"The perfect wine for these cooler autumn days! True to its moniker, the Wild Yeast Chardonnay is fermented using the native, wild yeasts that occur naturally on the skins of the grapes. Unwooded, it is fermented in underground cement tanks in a slow, volatile process that can take anywhere between 6 – 9 months. This method, although risky, results in incredibly expressive wine with a wisdom that is unattainable in wines made using commercial yeasts. Can be enjoyed for the next 3- 4 years."

If there's one wine farm you have to go to, let it be Springfield Estate. Sure, it's a little drive, but the scenery is stunning. You pass through the mountains and come out between rows and rows of wine farms.
This wine farm not only has a strong ethic and honour system they also support a local orphanage.
"Thunderbird." It's a blend of Cabernet Franc, Merlot, and Cabernet Sauvignon, with all grapes sourced from a vineyard planted on the grounds of the Die Herberg Orphanage. 100% of the profits go to the children.
Once you arrive, though a tree-lined road, you are greeted by a beautiful lake. The wine tasting room is intimate with a huge fireplace.
I have always been the Chardonnay lover in the house, but Springfield Estate has converted my husband. It's now his favourite wine.
Not only is the Chardonnay divine, but their reds are too.

Yes, lots and will take great joy in sipping our way through the bottles.
